Pesto Zucchini Dish
After being away for just 2 days, I came home to monstrous Zucchinis. They seriously quadrupled in their size. So now what to do with them all! First thing to do is to share, so I have given the gift of Zucchini to both Robyn and Angele. Robyn has made this next recipe many times, and was pretty excited to share it with you all.
Ingredients
2 Med Zucchini spiralized or julienned
1 Tomato cubed
4 Garlic buds minced
1 small onion diced
TSP chili flakes
2 TSB prepared pesto
1/2 Cup finely chopped Almonds
1/2 Cup diced cheddar or fresh parmesan (add at end of cooking)
Preparation
Saute garlic & onion. Add Zukes, chill flakes & pesto, when zuke is tender add tomato almonds and parm. Serve as a hot side dish. Goes great with chicken or fish. Also goes well as a main course.
